Biscuit spirals are easy to make: a turkey filling is spread over biscuit dough, which is then rolled up and cut into interesting-looking spirals

Meat-filled biscuit spirals make an interesting looking party food and are a welcome addition to the menu when serving a crowd. Biscuits and turkey go well together and can be combined to make delicious turkey-filled biscuits that resemble pinwheels.

Biscuit spirals are easy to make: tinned turkey is seasoned and spread over biscuit dough, which is rolled and cut into rounds.

Biscuit Dough Ingredients:

  • 2 cups of flour
  • 1/2 tsp. salt
  • 4 tsp. baking powder
  • 4 tbsp. shortening (room temperature)
  • 1 cup milk

Preparing Biscuit Dough:

  1. Mix dry ingredients, cut in lard until crumbly, add milk and stir lightly until dough forms.
  2. Add more liquid, if necessary, to make a slightly moist dough. Knead gently.
  3. Sprinkle flour on counter.
  4. Roll out biscuit dough to a thickness of 1/4".
  5. Shape into a large rectangle.

Preparing Turkey Mixture:

Prepare a savory turkey mixture to spread over biscuit dough.

In a bowl, mix together:

  • 2 tins of flaked turkey (156 grams)
  • Celery chopped fine (amount to preference)
  • Onion chopped fine (amount to preference)
  • Poultry seasoning (to taste)

Using a pastry cutter, cut turkey until finely minced. Add chopped onions and celery and shake in poultry seasoning. Mix well and check flavor, adding more poultry seasoning until turkey is spicy and seasoned to taste.

Making Biscuit Spirals With Turkey Filling

  1. Spread turkey mixture over biscuit dough, leaving 1/2" around the edges.
  2. Starting on wide side of rectangle, roll up dough jelly-roll style until a rectangular log is formed.
  3. To seal, moisten edges with water and pinch together until a seam forms.
  4. Place log seam-side down on a cutting board and slice into 1/2" wide circles.
  5. Place biscuit spirals on lightly buttered cookie sheet.
  6. Bake at 325° reducing oven temperature to 300° towards end of cooking time. Bake until biscuit rounds are golden brown. (Cooking time: approximately 15-20 minutes.)

Tips for Making Perfect Spirals

  • Make sure biscuit dough is slightly moist so that when spirals cook, biscuit crust is not dry.
  • When rolling up biscuit dough, ensure that log is rolled tightly to prevent filling mixture spilling out due to gaps (between filling and biscuit dough) inside spiral.
  • Double-pan so that bottoms of biscuit spirals do not over-brown.
  • Position oven rack higher up.
  • If freezing biscuits for future use, double-bag to prevent freezer burn.

Savory Turkey-Filled Biscuit Spirals

Biscuit spirals can be served cold and spread with butter or served warm and topped with turkey gravy. Meat-filled biscuits make a tasty treat, whether eaten warm or cold.
